Res has been found in 21 families, 31 genera and 72 species. Res-containing plants are mostly common medicinal plants, such as cassia, hellebore, knotweed, etc. Some are food, such as grapes.

Res exists in four main forms: cis-resveratrol, trans-resveratrol and cis-resveratrol glycosides, trans-resveratrol glycosides.

The latter two forms can release Res under the action of glycosidase in the intestinal tract. The physiological activity of the trans isomer is stronger than that of the cis isomer, and it mainly exists in the trans form in nature. Its structural formula is as follows:

Extraction of Resveratrol

At present, companies that produce and sell Res generally use natural plants as raw materials. Crude Res is extracted and isolated from Polygonum cuspidatum or grape skin, and then purified. Crude extraction techniques are mainly organic solvent extraction, alkaline extraction, enzyme extraction, microwave-assisted extraction, CO2 supercritical extraction, ultrasonic-assisted extraction and other new methods are also applied. The purpose of purification is to separate the resveratrol cis and trans isomers and resveratrol glycosides in the crude Res to obtain trans-resveratrol. Commonly used purification methods include chromatography, silica gel column chromatography, thin layer chromatography, and high performance liquid chromatography.
